皮蛋 preserved egg

A kind of cooked egg which can be eaten directly after removing the eggshell.
It is quite popular and well-known and you can find it everywhere in China.
The best way to eat it is with tofu, soy sauce, and vinegar.

I'm from China. I can think of two:

Stinky tofu. It not just looks bad, and it smells bad, too. However, the taste is super good. The locals say, the more stinky it is, the more tasty it is. It's actually fried Tofu.

Pig's ear. Like its name - it's pig's ear. It's braised and then cut into strips. We use garlic and sesame sauce to dip it.

Black blood.

It was a dutch traditional street food. But now you can only have it in restaurants. It’s one of my grandpa’s favorite dish.
