Nevertheless, I have to mention that there are 56 ethnic groups and more than 1 billion individuals in China. There are common characteristics depending on the groups or geographies, but there are always counter-examples existed. It’s hard to attribute some culture as a standard, so as a traveller I think the fun part is to recognise and collect the differences.

In my opinion, generally, if you would like to taste Chinese food which rarely finds in other countries but usually eaten by Chinese locals, I would recommend below:
1) Hot pot - a kind of traditional and pop food which you can see the hot pot restaurants almost in every city. Especially when it gets colder, we would like to have hotpot together with friends or families. Wiki says, “Hot pot is a Chinese cooking method, prepared with a simmering pot of soup stock at the dining table, containing a variety of East Asian foodstuffs and ingredients. While the hot pot is kept simmering, ingredients are placed into the pot and are cooked at the table, in a manner similar to fondue. Typical hot pot dishes include thinly sliced meat, leafy vegetables, mushrooms, wontons, egg dumplings, tofu, and seafood. The cooked food is usually eaten with a dipping sauce.” In fact, in different regions, people prefer different kinds of ingredients in hotpots. For instance, in Sichuan Province, people like duck intestine and blood; while in Inner Mongolia, people prefer beef and lamb.
2) Noodle - I believe there are hundreds of types of noodles in China. So, different from which you can find in Chinese restaurants in western countries, you will find plenty kinds of Noodle Houses in China which mainly even only make and cook noodles.
3) Dumplings - The most typical dumplings in China should be boiled by hot water instead of being fried. However, although it is one of the most traditional dishes which each Chinese family will have it on Spring Festival (the biggest festival in China), the best dumplings are always in Chinese homes. But you can also find some superb homemade dumpling restaurants.
